Charlie Davis founded Anza Knives in 1982, and now runs the business with his daughter Chana. Anza Knives has stayed true to the process by keeping it old school and standing by the tradition of making these tools by hand, instead of automating the process, cutting corners, and outsourcing. These tough working knives are meant to be used hard!
We start with high carbon steel files, then use our secret tempering process that makes the steel stronger and more flexible. Files are usually brittle, but after we use our secret tempering process, they are extremely strong, flexible, and ready to hold the sharpest edge you’ll ever experience.
Anza Knives are handmade from repurposed high-carbon steel files, with no two blades are ever being the same. Slight marks, subtle textures, and natural variations are not flaws, they’re the fingerprints of craftsmanship. We don’t want our knives to look stamped out and exactly the same. We want them to look handmade. Each knife is unique.
